For the detection of hazelnut protein in food
INTENDED USE
The BIOKITS Hazelnut Assay kit is intended for use in the detection and quantification of Hazelnut protein at very low concentrations in uncooked and cooked foods.
The risk of allergy caused by undeclared Hazelnut in food means there is a need to identify Hazelnut within foods and environmental swabs in order to provide accurate allergen labelling information on food products.
THE ASSAY
The assay utilises polyclonal antibodies to Hazelnut protein in a non-competitive , sandwich type ELISA. The ready to use standards provide accurate quantification in parts per million (ppm). Food samples are extracted using a tris / high salt / gelatin buffer, diluted, then tested in the assay.
SUITABILITY
Suitable for testing milk & plain chocolate, biscuits / cookies, baked goods, cereals & cereal bars, other nuts and environmental swabs taken with the BIOKITS Allergen Swabbing Kit (BASK; Cat. No. 901042J).

VALIDATION
- Successfully identified 95% of products listing Hazelnut as an ingredient
- Successfully identified 83% of products not listing Hazelnut as an ingredient
- Cross reactivity – a panel of commodities including nuts, pulses, grains, seeds and proteins all gave results below the 1ppm in the assay, except for Walnut and Pecan, which were found to have a low reactivity.
- Compatible with the BIOKITS Allergen Swabbing Kit (BASK; Cat. No. 901042J) down to at least 5μg / 25 cm2 Hazelnut protein.
